How to cook the perfect butterflied chicken on your BBQ

When it comes to barbecuing chicken on your gas BBQ or electric BBQ you should definitely try butterflying it. Butterflied chicken is easier to marinate and gives you crispier skin!
Here’s how you can cook the perfect butterflied chicken on your BBQ grill.
First, grab the following ingredients:
1 whole chicken
½ cup of flavoured BBQ sauce
¼ cup orange juice
2 tbsp soft brown sugar
1 tbsp mustard
olive oil or butter
kosher salt and fresh ground black pepper
Rinse the chicken inside out and pat it dry with paper towels. Cut off the neck and remove the excess fats.
Position the chicken so that the breast side is down and the legs are pointed towards you. With a pair of scissors or a knife, cut down each side of the backbone, from the tail to the neck. Cut close to the backbone to avoid wasting meat, and remove the backbone itself. Flip the chicken over and press firmly on the breastbone to flatten it.
For the marinade, mix together the flavoured BBQ sauce, orange juice, brown sugar and mustard.
Brush both sides of the chicken with olive oil or butter. Pour the marinade mixture over the chicken generously. Season with salt and pepper to taste. Cover and refrigerate. You can let it sit for 1 to 2 hours. For a richer flavour, we suggest leaving the chicken to marinate overnight.
Preheat the grill for about 5 to 10 minutes. Close the lid and allow the grill to reach very high heat. Once it’s reached high heat, place the chicken breast side up on the grill. Close the lid again and set to medium or low heat. Let it cook for 45 minutes for 1.25 hours, depending on the size of the chicken.
To test if the chicken is cooked completely, skewer the thickest part of the meat. When the juices run clear, it’s cooked perfectly through. Place the chicken on a tray or large plate and let it sit for 10 to 15 minutes before carving.
